Hello Friends,
I’m so excited to be partnering with Lean Cuisine to share one of my favorite, quick and easy, nutritious go-to meals: Lean Cuisine Vermont White Cheddar Mac & Cheese with a side of broccolini. I love this flavor – not only does it have cheddary, cheesy goodness but the pasta is organic. I always make sure to fill half my plate with veggies to make it a balanced meal.
Here is the broccolini recipe for you all to try:
Ingredients-

Broccolini or broccoli (any amount you want)

Olive oil
-
Salt and pepper
-
Lemon
Instructions-
Preset your oven to 350 degrees. Wash and prep the broccoli/broccolini then spread them out on a cookie sheet. Drizzle the olive oil over the veggies then add salt and pepper to taste.
Place in oven and bake for 15 min.
When the broccoli has been in the oven for about 10 minutes, I get started on the Lean Cuisine. [Insert product cooking instructions]
Then, after they’re both done baking, remove broccoli/broccolini from the oven and sprinkle some lemon juice over the veggies. Fill half your plate with the broccoli and add your serving of Lean Cuisine.
And you’re DONE!
This meal is perfect for when I’m on the run or limited on time… because let’s be honest, moms never have enough time to eat haha. Easy meals help me stick with my goals to live a balanced lifestyle and help me realize that eating a nutritious meal doesn’t need to be a big overwhelming ordeal.
